A couple of nights ago during a bout of insomnia, I found myself watching an episode of Iron Chef America… The secret ingredient? SPINACH! It was awesome to see all of the different ways that the chefs incorporated spinach into so many dishes in so many ways!
One of the judges mentioned something I was surprised that I had never heard before: spinach is a veggie that can offer different nutrients to our body when it’s cooked versus when it’s raw…. I always just thought about the detriments of cooking veggies to the point of nutrient depletion or killing the enzymes that help our bodies digest them….
